Instructions

  1. Prepare the Fruits: Rinse the strawberries under cool water and hull them by removing the green tops. Peel the mangoes carefully using a vegetable peeler or a sharp knife, then slice the flesh away from the pit and dice into roughly 1-inch chunks.
  2. Combine Ingredients in Blender: Place the diced mango and hulled strawberries into a high-speed blender. Add half of the filtered water, your chosen sweetener if using, fresh lime juice, and the optional pinch of fine sea salt.
  3. Blend until Smooth: Secure the blender lid and blend on high speed until the mixture is completely smooth with no large fruit chunks remaining.
  4. Strain the Mixture: Position a fine-mesh sieve over a large pitcher or bowl. Pour the blended fruit mixture through the sieve. Using the back of a spoon or rubber spatula, press down on the solids to extract as much liquid as possible. Discard the remaining pulp and seeds.
  5. Taste and Adjust: Stir the strained agua fresca and pour a small amount into a glass. Adjust the sweetness by adding more sweetener if necessary, or add another squeeze of lime juice for extra zing.
  6. Dilute to Desired Consistency: Gradually stir in the remaining filtered water until the flavor balance and consistency suit your preferences.
