- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 1 teaspoon paprika
Sausage & Vegetables
- 12 oz Italian sausage, sliced (or preferred variety)
- 1 small onion, diced

Spicy Tomato Butter
- 1 can (14 oz) diced tomatoes, drained
- 3 tablespoons unsalted butter
- ½ teaspoon red pepper flakes (adjust to taste)
Garnish
- Fresh herbs for garnish (parsley or cilantro)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the potatoes.
- Prepare Potatoes: In a large bowl, toss the diced potatoes with olive oil, salt, black pepper, and paprika until they are evenly coated.
- Roast Potatoes: Spread the coated potatoes evenly on a baking sheet. Roast in the preheated oven for 20 minutes, tossing halfway through, until the potatoes are golden and crispy.
- Cook Sausage: While the potatoes roast, heat a skillet over medium heat. Add the sliced sausage and cook, browning them for 5-7 minutes until cooked through.
- Sauté Vegetables: To the skillet with sausage, add the diced onion and red bell pepper. Cook until softened, approximately 5 minutes.
- Add Garlic: Stir in the minced garlic and sauté for 1-2 minutes more until fragrant.
- Combine Potatoes and Sausage Mixture: Transfer the roasted potatoes into the skillet with the sausage and vegetables. Gently mix all the ingredients to combine evenly.
- Prepare Spicy Tomato Butter: In a small saucepan, melt the unsalted butter over low heat. Add the drained diced tomatoes and red pepper flakes. Let the mixture simmer for 3-5 minutes to blend the flavors.
- Dress the Hash: Drizzle the spicy tomato butter over the potato and sausage hash. Toss lightly to coat everything evenly.
- Serve: Serve the hash hot, garnished with fresh parsley or cilantro for a burst of color and fresh flavor.
Notes
- Adjust red pepper flakes in the spicy tomato butter to control heat level.
- You can use any variety of sausage you prefer; spicy or mild both work well.
- Remove excess fat from sausage after browning if you want a leaner dish.
- If you prefer extra crispy potatoes, roast a bit longer but watch carefully to avoid burning.
- This recipe can be made gluten free by ensuring sausage and spices are gluten free.
- Fresh herbs like parsley or cilantro add fresh brightness but can be omitted if unavailable.
