A creamy and flavorful Rotel Dip made with seasoned ground beef, spicy diced tomatoes, and melted Velveeta cheese. This delicious dip is perfect for parties or casual snacking and can be served warm with tortilla chips or toasted baguettes.

Meat and Seasoning
- 1 lb ground beef (lean, medium, or extra lean)
- 1 tbsp taco seasoning (or 1/2 tsp each chili powder, garlic powder, onion powder, paprika, cumin)

- 1 can Rotel (10 ounces, or 1 can diced tomatoes with chilies)
- 1 brick Velveeta cheese (2 cups, 16 ounces, cubed)
Garnishes (Optional)
- Diced tomatoes (reserve 1 tbsp for garnish)
- Fresh parsley or cilantro (chopped)
- Green onions (chopped)
Instructions
- Cook the beef: Heat a large skillet or frying pan over medium heat. Add the ground beef and break it apart using a wooden spoon. Cook for about 5 minutes until no pink remains and the meat is fully cooked through. Drain any excess fat from the pan.
- Add seasoning and tomatoes: Reduce heat to medium and stir in the taco seasoning and entire can of Rotel with its juices. Cook for 2-3 minutes until fully combined and the mixture is simmering. Optionally reserve 1 tablespoon of the diced tomatoes to garnish later.
- Melt the cheese: Add the cubed Velveeta cheese to the skillet. Stir continuously until the cheese is completely melted and the dip becomes creamy and smooth.
- Garnish and serve: Optionally top the dip with the reserved diced tomatoes, chopped fresh parsley or cilantro, and sliced green onions. Serve the dip immediately with tortilla chips, crostini, or toasted baguettes for dipping and enjoy!
Notes
- You can adjust the spiciness by choosing mild or hot Rotel tomatoes.
- For a thicker dip, use less Rotel juice or cook it down slightly before adding cheese.
- Ground turkey or chicken can be used as a leaner alternative to beef.
- Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently on the stovetop or microwave.
- Adding a splash of milk or cream while melting Velveeta can make the dip extra creamy.
