- 1 cup vanilla protein powder
- 1/2 cup unsweetened shredded coconut
- 1/2 cup dark chocolate chips
- Pinch of sea salt
Wet Ingredients
- 1/2 cup creamy peanut butter
- 1/3 cup honey or maple syrup
Instructions
- Combine Dry and Wet Ingredients: In a large mixing bowl, mix together the oats, vanilla protein powder, peanut butter, honey or maple syrup, and shredded coconut until the mixture is sticky and well blended.
- Add Chocolate Chips and Salt: Gently fold in the dark chocolate chips and a pinch of sea salt until evenly distributed throughout the mixture.
- Form Balls: Scoop out about 1 tablespoon of the mixture and roll it between your palms to form bite-sized balls.
- Chill: Place the formed balls on a parchment-lined tray and refrigerate for 30 minutes to firm up.
- Melt Chocolate: While the balls are chilling, melt additional dark chocolate in the microwave or using a double boiler until smooth.
- Dip and Decorate: Dip each chilled ball halfway into the melted chocolate, then sprinkle extra shredded coconut on top while the chocolate is still warm. Let them cool completely on parchment paper until the chocolate sets.
