Description

A hearty and comforting Sausage and Tater Tot Breakfast Quiche featuring a crispy tater tot crust, savory breakfast sausage, fluffy eggs, cottage cheese, and melted mozzarella cheese. Perfect for a filling breakfast or brunch, this quiche is baked to golden perfection and garnished with fresh parsley.

Ingredients

Scale

Crust

  • 2 cups frozen tater tots

Filling

  • ½ pound ground breakfast sausage
  • 6 large eggs
  • ½ cup low fat cottage cheese (2%)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup freshly grated mozzarella cheese

Garnish

  • Freshly chopped parsley (optional)

Instructions

  1. Preheat and prepare crust: Preheat the oven to 400 degrees F. Grease a 9-inch deep-dish pie dish with butter. Place the frozen tater tots evenly in the prepared pie dish. Bake for 15 minutes until partially cooked and crispy.
  2. Form crust: Remove the tater tots from the oven and mash them gently into an even layer covering the bottom and sides of the pie dish to create a crust.
  3. Lower oven temperature: Reduce the oven temperature to 350 degrees F to prepare for baking the quiche filling.
  4. Cook sausage: While the oven cools, cook the breakfast sausage in a skillet over medium to medium-high heat until fully cooked and browned. Crumble during cooking. Remove from heat and let it cool slightly.
  5. Prepare egg mixture: In a large bowl, whisk together the eggs, low fat cottage cheese, salt, and black pepper until combined. Stir in the grated mozzarella cheese and the cooked sausage, mixing well.
  6. Assemble and bake: Pour the egg, cheese, and sausage mixture evenly over the tater tot crust in the pie dish. Bake at 350 degrees F for 30 minutes or until the quiche center is set and firm.
  7. Cool and garnish: Remove the quiche from the oven and let it cool for at least 5 minutes before slicing. Garnish with freshly chopped parsley if desired. Serve warm and enjoy!

Notes

  • Using frozen tater tots straight from the freezer helps create a crispy and easy crust.
  • Allow cooked sausage to cool slightly before mixing with eggs to avoid scrambling the eggs early.
  • The quiche can be garnished with parsley or other fresh herbs for added freshness and color.
  • Serve with a side of fresh fruit or a light salad for a complete breakfast.
  • Leftovers can be refrigerated and reheated for up to 3 days.
