Description

This Sausage and Tater Tot Breakfast Quiche is a savory and hearty dish perfect for a satisfying breakfast or brunch. A crispy tater tot crust holds a rich filling of breakfast sausage, eggs, cottage cheese, and mozzarella, baked to golden perfection. Garnished with fresh parsley, this quiche is easy to prepare and delights with its comforting flavors and textures.

Ingredients

Scale

Crust

  • 2 cups frozen tater tots

Filling

  • ½ pound ground breakfast sausage
  • 6 large eggs
  • ½ cup low fat cottage cheese (2%)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup freshly grated mozzarella cheese

Garnish

  • Freshly chopped parsley (optional)

Instructions

  1. Preheat and Bake Tater Tots: Preheat the oven to 400 degrees F. Grease a 9-inch deep-dish pie dish with butter. Place the frozen tater tots evenly in the pie dish and bake for 15 minutes until slightly crispy.
  2. Form Tater Tot Crust: Remove the partially baked tater tots and mash them into an even layer covering the bottom and sides of the pie dish to form the quiche crust.
  3. Lower Oven Temperature: Reduce the oven temperature to 350 degrees F for baking the quiche filling.
  4. Cook Sausage: In a skillet over medium to medium-high heat, fully cook and crumble the ground breakfast sausage. Remove from heat and let cool slightly.
  5. Prepare Filling Mixture: In a large bowl, whisk together the eggs, low fat cottage cheese, salt, and black pepper. Stir in the grated mozzarella cheese and the cooked sausage until fully combined.
  6. Assemble and Bake Quiche: Pour the egg and sausage mixture evenly over the tater tot crust in the pie dish. Bake at 350 degrees F for 30 minutes or until the center is fully set.
  7. Cool and Serve: Remove the quiche from the oven and let it cool for at least 5 minutes. Garnish with freshly chopped parsley if desired. Slice and enjoy your hearty breakfast quiche!

Notes

  • Make sure to fully cook the sausage to ensure food safety and flavor.
  • You can substitute the mozzarella cheese with cheddar for a sharper taste.
  • For a vegetarian version, omit the sausage and add sautéed vegetables like bell peppers and mushrooms.
  • Letting the quiche cool before slicing helps it hold together better.
  • Use low-fat cottage cheese to keep the recipe lighter without sacrificing creaminess.
