Description

Shrimp Taco Bites are a delightful appetizer featuring marinated, sautéed shrimp served atop crispy scoop-style tortilla chips, topped with creamy sour cream, fresh avocado, and zesty salsa. This flavorful dish combines the freshness of lime and cilantro with a hint of spice, perfect for entertaining or a fun snack.

Ingredients

Scale

Shrimp and Marinade

  • 24 large raw shrimp (peeled, deveined, and tails-off)
  • 1/4 cup olive oil
  • 3 tablespoons honey
  • Juice of 2 small limes
  • Zest of one lime
  • 3 cloves garlic (minced)
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Toppings and Assembly

  • 24 scoop-style tortilla chips
  • 1 container (16 ounces) sour cream
  • 1 large ripe avocado (diced or mashed)
  • 1 cup salsa or Pico de Gallo
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving (optional)

Instructions

  1. Marinate the Shrimp: In a large bowl, combine olive oil, honey, lime juice, lime zest, minced garlic, chili powder, red pepper flakes, kosher salt, and black pepper. Add the peeled and deveined shrimp to the marinade and toss well to coat all pieces evenly. Cover the bowl and refrigerate for 1 hour to allow the flavors to meld.
  2. Cook the Shrimp: Heat a nonstick skillet over medium-high heat. Add the shrimp along with half of the marinade to the skillet; discard the remaining marinade. Cook the shrimp for 2 to 3 minutes on each side until they turn pink and curl up, being careful not to overcook. Remove from heat and let shrimp rest for a few minutes.
  3. Prepare the Taco Bites: On each scoop-style tortilla chip, spread about 1 teaspoon of sour cream followed by 1 teaspoon of diced or mashed avocado. Place one cooked shrimp on top of each chip.
  4. Add Salsa and Garnish: Spoon a small amount of salsa or Pico de Gallo onto each shrimp-topped chip. Garnish with fresh cilantro leaves and a squeeze of lime if desired for added freshness and flavor.
  5. Serve Immediately: Serve the shrimp taco bites fresh, while the tortilla chips remain crunchy and the shrimp warm. Enjoy as a perfect appetizer or snack for gatherings.

Notes

  • To make cleanup easier, discard half the marinade before cooking shrimp to avoid cross-contamination.
  • Do not overcook the shrimp; they cook quickly and become tough if left too long in the skillet.
  • For a spicier kick, increase red pepper flakes or add a dash of hot sauce to the marinade or salsa.
  • These taco bites are best served immediately to maintain chip crunchiness.
  • Leftover cooked shrimp can be refrigerated for up to 2 days but are best used fresh.
