Description

This Slow Cooker Beef Stroganoff recipe delivers tender, flavorful beef simmered in a rich brown gravy mix, enhanced with sour cream, served over classic egg noodles. Perfect for a comforting, easy-to-prepare meal that requires minimal hands-on time.

Ingredients

Scale

Main Ingredients

  • 2 lbs beef stew meat
  • 1 (0.87-ounce) packet brown gravy mix
  • 1 (1-ounce) packet au jus mix
  • 1 1/2 cups water
  • 1/2 cup sour cream
  • 1 (8-ounce) package egg noodles

Instructions

  1. Prepare the Slow Cooker: Spray a 4 to 6-quart slow cooker with nonstick cooking spray to prevent sticking and promote easy cleanup. Add the brown gravy mix, au jus mix, and water, then whisk them together until fully combined.
  2. Add the Beef: Place the beef stew meat into the slow cooker and stir well to coat the meat with the gravy mixture, ensuring the beef is mostly submerged in liquid for even cooking.
  3. Cook the Beef: Cover the slow cooker and cook on low for 6 to 8 hours or on high for about 5 hours. Cook until the beef is tender and easily breaks apart.
  4. Incorporate Sour Cream: Approximately 30 minutes before serving, remove about 1/2 cup of the gravy from the slow cooker into a small bowl. Stir in the sour cream until smooth, then return the mixture back to the slow cooker and stir to combine. Cover and continue cooking on high for another 20 minutes to blend flavors.
  5. Cook the Noodles: While the sour cream finishes cooking, prepare the egg noodles separately according to the package instructions until al dente. Drain and keep warm.
  6. Serve: Spoon the beef and creamy gravy over the hot egg noodles. Optionally, you can combine the noodles directly in the slow cooker with the beef mixture and stir before serving to allow the noodles to soak up more sauce.

Notes

  • For a thicker sauce, you can reduce the liquid slightly or add a cornstarch slurry before adding the sour cream.
  • Use low-sodium gravy and au jus mixes to reduce sodium content if desired.
  • Adding mushrooms or sautéed onions before slow cooking can enhance flavor and texture.
  • Leftovers reheat well and can be refrigerated for up to 3 days.
