Description

This Spicy Jalapeño Popper Stuffed Chicken & Bacon Roll is a flavorful and indulgent dish featuring tender chicken breasts filled with a creamy blend of jalapeños, cheddar, and cream cheese. Wrapped in crispy bacon and baked to perfection, it’s a perfect meal for those who love a spicy twist on a classic comfort food.

Ingredients

Scale

Chicken and Bacon

  • 4 Boneless, Skinless Chicken Breasts
  • 8 slices Bacon

Stuffing

  • 8 oz Cream Cheese, softened
  • 1 cup Shredded Cheddar Cheese
  • 2-3 Jalapeños, diced
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • Salt and Black Pepper, to taste

Coating and Drizzle

  • 1 cup Breadcrumbs (plain or seasoned)
  • 2 tbsp Olive Oil

Instructions

  1. Prepping the Chicken: Place the chicken breasts between two sheets of plastic wrap. Using a meat mallet, gently pound each breast to an even thickness of about ½ inch to ensure even cooking and easier rolling.
  2. Making the Stuffing: In a mixing bowl, combine the softened cream cheese, shredded cheddar, diced jalapeños, garlic powder, onion powder, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  3. Wrapping the Chicken: Spread a generous layer of the cheese mixture evenly over each chicken breast. Roll each breast tightly from one end to the other. Wrap every chicken roll with two slices of bacon, securing with toothpicks to keep the bacon in place during cooking.
  4. Prepare for Baking: Preheat your oven to 375°F (190°C). Arrange the bacon-wrapped chicken rolls in a baking dish. Drizzle the olive oil over the rolls and sprinkle breadcrumbs evenly on top to add a crunchy texture.
  5. Bake: Bake the chicken rolls for 30-35 minutes or until the chicken is thoroughly cooked, reaching an internal temperature of 165°F (75°C), and the bacon is crisped and browned.
  6. Cool and Serve: Remove the chicken rolls from the oven and allow them to cool for a few minutes before slicing. Serve warm and enjoy the spicy, creamy flavors with the crunchy bacon exterior.

Notes

  • Use gloves when handling jalapeños to avoid irritation.
  • Ensure chicken is pounded evenly for uniform cooking.
  • Can use plain or seasoned breadcrumbs depending on taste preference.
  • Check internal temperature with a meat thermometer to ensure safety.
  • To make it less spicy, reduce the amount of jalapeños or remove seeds before dicing.
