Description

Delightful and easy-to-make Strawberry Shortcake Bites combine fresh strawberries, almond flour, and graham cracker crumbs into bite-sized treats coated in smooth white chocolate. Perfect for a refreshing snack or party dessert, these no-bake bites are quick to prepare and offer a sweet, creamy, and fruity flavor in every mouthful.

Ingredients

Scale

Filling

  • 1 cup strawberries, roughly diced
  • 1 sleeve graham cracker sheets (about 9 full sheets)
  • 3/4 cup almond flour

Coating

  • 1 cup white chocolate chips
  • 2 teaspoons coconut oil

Instructions

  1. Crush Graham Crackers: Process the graham cracker sheets in a food processor until finely crushed with no large chunks remaining to ensure a smooth texture for the filling.
  2. Add Strawberries: Add the roughly diced strawberries to the food processor and pulse until they are finely chopped but not pureed, preserving a fresh fruity texture.
  3. Combine Almond Flour: Add the almond flour to the mixture and pulse until everything comes together to form a cohesive, moldable filling.
  4. Form Balls: Scoop the mixture into 16 equal balls and place them on a lined baking sheet. Transfer to the freezer and chill for 20 to 30 minutes to firm up.
  5. Melt Chocolate Coating: In a microwave-safe bowl, melt the white chocolate chips and coconut oil in 30-second intervals, stirring between each, until smooth and well combined.
  6. Dip and Coat: Remove the frozen balls from the freezer and individually dip each one into the melted white chocolate, ensuring they are evenly coated, then place back on the lined baking sheet.
  7. Set and Store: Return the coated bites to the freezer for 5 minutes to allow the chocolate to harden. Store the finished treats in the refrigerator and serve chilled for the best texture and flavor.

Notes

  • Make sure not to puree the strawberries to retain a bit of fresh texture in the filling.
  • Using coconut oil helps the white chocolate have a smoother, shinier coating.
  • Store leftover bites in an airtight container in the refrigerator for up to 3 days.
  • To speed up the process, you can freeze the bites longer before dipping if you want a firmer coating.
  • For a dairy-free option, ensure white chocolate chips are vegan or use a suitable substitute.
