- 1/2 cup plain Greek yogurt (2% milkfat or higher)
- 1/4 cup mayonnaise

- 3/4 teaspoon onion powder
- 1/2 teaspoon garlic powder
Salad
- 2 1/2 cups cooked chicken, cubed or diced (rotisserie chicken breast preferred)
- 1 1/2 cups red grapes, sliced
- 1 cup finely diced celery (about 2-3 stalks)
- 1 cup roasted cashew halves and pieces
- Optional seasonings (dried chives, fresh herbs, additional salt and pepper, freeze-dried chives, white pepper)
Instructions
- Make Dressing: Whisk together the Greek yogurt, mayonnaise, Dijon mustard, sugar, kosher salt, onion powder, and garlic powder until smooth. Taste and adjust seasoning as needed, ensuring the dressing is a bit salty and concentrated since it will be mixed with other ingredients.
- Combine Mix-ins: In a large bowl, add the cubed chicken, sliced grapes, diced celery, and roasted cashews. Toss them together gently to combine.
- Dress the Salad: Pour as much of the prepared dressing over the chicken mixture as you prefer and toss gently to coat all ingredients evenly.
- Season and Adjust: Taste the salad and add any extra seasonings such as dried or freeze-dried chives, white pepper, salt, or herbs to your liking. Stir well to integrate flavors.
- Serve and Store: Enjoy the salad cold on a whole wheat wrap, lettuce wrap, sandwich, toast, with crackers, or simply on its own. Store any leftovers in an airtight container in the refrigerator for up to 4 days.
