Description

A quick and delicious chicken salad recipe featuring a creamy Greek yogurt-based dressing, sweet grapes, crunchy celery, and roasted cashews. Perfect for sandwiches, wraps, or as a standalone cold salad.

Ingredients

Scale

Dressing

  • 1/2 cup plain Greek yogurt (2% milkfat or higher)
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 teaspoons sugar (or honey, to taste)
  • 3/4 teaspoon kosher salt
  • 3/4 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Salad

  • 2 1/2 cups cooked chicken, cubed or diced (rotisserie chicken breast preferred)
  • 1 1/2 cups red grapes, sliced
  • 1 cup finely diced celery (about 2-3 stalks)
  • 1 cup roasted cashew halves and pieces
  • Optional seasonings (dried chives, fresh herbs, additional salt and pepper, freeze-dried chives, white pepper)

Instructions

  1. Make Dressing: Whisk together the Greek yogurt, mayonnaise, Dijon mustard, sugar, kosher salt, onion powder, and garlic powder until smooth. Taste and adjust seasoning as needed, ensuring the dressing is a bit salty and concentrated since it will be mixed with other ingredients.
  2. Combine Mix-ins: In a large bowl, add the cubed chicken, sliced grapes, diced celery, and roasted cashews. Toss them together gently to combine.
  3. Dress the Salad: Pour as much of the prepared dressing over the chicken mixture as you prefer and toss gently to coat all ingredients evenly.
  4. Season and Adjust: Taste the salad and add any extra seasonings such as dried or freeze-dried chives, white pepper, salt, or herbs to your liking. Stir well to integrate flavors.
  5. Serve and Store: Enjoy the salad cold on a whole wheat wrap, lettuce wrap, sandwich, toast, with crackers, or simply on its own. Store any leftovers in an airtight container in the refrigerator for up to 4 days.

Notes

  • This salad is best served chilled but can be eaten immediately after preparation.
  • Use rotisserie chicken for convenience, or leftover cooked chicken works great.
  • Honey can be used instead of sugar to sweeten the dressing naturally.
  • Feel free to customize the mix-ins by adding dried or fresh herbs for extra flavor.
  • Store leftovers in an airtight container in the fridge for up to 4 days to maintain freshness.
  • Adjust the amount of dressing to your taste preference for a creamier or lighter salad.
