Ingredients
Scale
Main Ingredients:
- 1 pound white fish fillets, bite-sized
- 1 tablespoon vegetable oil
Aromatics:
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, minced
- 1 red bell pepper, sliced
- 1–2 red chilies, sliced
Broth:
- 14 oz coconut milk
- 2 cups fish stock or chicken broth
- 2 tablespoons fish sauce
- 2 limes, zest and juice
- 1 teaspoon sugar
- 1 cup cherry tomatoes, halved
Garnish:
- Fresh cilantro and basil
- Lime wedges (for serving)
Instructions
- Cook Aromatics: Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Then add minced garlic, ginger, and sliced red chilies, cooking for an additional 1-2 minutes until fragrant.
- Prepare Broth: Pour in the coconut milk and fish stock (or chicken broth). Stir in fish sauce, lime zest and juice, and sugar. Bring the mixture to a gentle simmer over medium heat.
- Add Vegetables: Add the sliced red bell pepper and halved cherry tomatoes. Cook for 5-7 minutes until the vegetables are tender but still have a slight crispness.
- Cook Fish: Gently add the bite-sized fish pieces to the simmering broth. Cook for 5-7 minutes, or until the fish is opaque and cooked through, being careful not to over-stir to keep the fish intact.
- Season and Serve: Taste the soup and adjust seasoning as needed (more fish sauce, lime juice, or sugar if desired). Ladle the soup into bowls and garnish with fresh cilantro and basil. Serve with lime wedges on the side for extra brightness.
Notes
- Use fresh white fish like cod, halibut, or snapper for best results.
- Adjust the number of red chilies to control the soup’s spiciness.
- Fish stock adds deeper flavor, but chicken broth is a good substitute.
- Serve with jasmine rice for a more filling meal.
- This soup is naturally gluten free and can be adapted for a dairy-free diet.
