- 1 onion or shallot, chopped

- 2 tbsp butter or olive oil
- 100ml cream or milk

Instructions
- Prepare the vegetables: Wash and chop the broccoli, onion, leek, garlic, and potato. Make sure to rinse the leeks thoroughly to remove any dirt or grit.
- Sauté aromatics: In a large saucepan, melt the butter or heat the olive oil over medium heat. Add the chopped onion, sliced leek, and minced garlic, cooking until they are soft and fragrant, about 5 minutes.
- Add potato and broccoli stalks: Stir in the diced potato and chopped broccoli stalks. Cook for another 2 to 3 minutes to start softening them.
- Simmer with stock: Pour in the vegetable or chicken stock and bring the mixture to a simmer. Let it cook gently for 15 to 20 minutes until all the vegetables are tender.
- Blend the soup: Use an immersion blender or transfer to an upright blender to purée the soup until smooth and creamy.
- Add cream and Stilton cheese: Stir in the cream or milk and the crumbled Stilton cheese. Heat the soup gently, stirring until the cheese is completely melted and incorporated.
- Season and serve: Season the soup with salt and pepper to your taste. Serve hot for a comforting meal.

- Use full-fat cream for a richer soup or milk for a lighter version.
