  • 1 11-oz can corn with red & green bell peppers (Mexican corn)
  • 2 cups instant brown rice

Instructions

  1. Cook the Turkey: In a large skillet over medium heat, cook and brown the lean ground turkey, breaking it up into small pieces with a spatula until fully cooked and no longer pink.
  2. Add Seasoning and Liquids: Stir in the taco seasoning mix, water, salsa, and the canned corn with red and green bell peppers. Bring the mixture to a boil, ensuring it is well combined.
  3. Incorporate Rice and Simmer: Stir in the instant brown rice, then reduce heat to medium and simmer uncovered for 5 minutes to allow the rice to start cooking and absorb flavors.
  4. Finish Cooking off Heat: Cover the skillet with a tight-fitting lid and turn off the heat, leaving the pot on the burner. Let it stand covered for 15-20 minutes until the liquid is fully absorbed and the rice is tender.
