Ingredients
Scale
Main Ingredients
- 1 lb. lean ground turkey
- 1 pkg. taco seasoning
- 2 1/4 cups water
- 1 16-oz jar salsa (thick & chunky kind works best)
- 1 11-oz can corn with red & green bell peppers (Mexican corn)
- 2 cups instant brown rice
Toppings (Optional)
- Shredded cheese
- Cilantro
- Green onions
- Sour cream
- Tomato
- Lettuce
Instructions
- Cook the Turkey: In a large skillet over medium heat, cook and brown the lean ground turkey, breaking it up into small pieces with a spatula until fully cooked and no longer pink.
- Add Seasoning and Liquids: Stir in the taco seasoning mix, water, salsa, and the canned corn with red and green bell peppers. Bring the mixture to a boil, ensuring it is well combined.
- Incorporate Rice and Simmer: Stir in the instant brown rice, then reduce heat to medium and simmer uncovered for 5 minutes to allow the rice to start cooking and absorb flavors.
- Finish Cooking off Heat: Cover the skillet with a tight-fitting lid and turn off the heat, leaving the pot on the burner. Let it stand covered for 15-20 minutes until the liquid is fully absorbed and the rice is tender.
- Serve and Garnish: Serve the turkey taco skillet into bowls and top with your favorite toppings like shredded cheese, cilantro, green onions, sour cream, tomato, and lettuce. Enjoy warm!
Notes
- Use a thick and chunky salsa for best texture and flavor.
- Instant brown rice cooks faster but you can substitute regular brown rice by adjusting cooking times.
- Covering the skillet and letting it rest with the heat off finishes cooking the rice evenly without overcooking.
- Customize with your choice of toppings to suit your taste.
- For spicier heat, add jalapeรฑos or hot sauce as a topping.
