Instructions
- Blend Ingredients: In a blender, combine the sweet corn, egg, all-purpose flour, salt, and granulated sugar. Blend until the mixture is mostly smooth but still retains some texture for a rustic feel in the cachapas.
- Heat Pan: Preheat a large skillet over medium heat. Once hot, add a splash of vegetable oil to prevent sticking and to help the cachapas develop a beautiful golden crust.
- Cook Cachapas: Using a spoon, pour approximately 60 ml of the batter onto the skillet, spreading it gently into a round pancake shape. Cook each side for 3–4 minutes or until golden brown and cooked through, flipping carefully to avoid breaking.
- Add Cheese: Place a generous amount of buffalo mozzarella cheese in the center of each cachapa while still warm. Fold the cachapa over to cover the cheese and allow the residual heat to melt the cheese inside.
- Serve: Add a pat of unsalted butter on top of each cachapa for added richness and serve immediately while warm to enjoy the gooey cheesy filling at its best.

- You can substitute all-purpose flour with gluten-free flour to make the recipe gluten-free.
