- ½ cup roasted beet cubes (about 1 small beet)
- 1 cup frozen mixed berries (strawberry & raspberry blend)
- ½ medium banana, previously frozen
- 1 cm fresh ginger, peeled and grated
Liquids & Creaminess
- 1 cup 100 % orange juice, divided
- ½ cup plain Greek yogurt (2 % fat)
- ¼ cup cold water (only if needed for blending)
Add-Ins & Flavor Enhancers
- 1 Tbsp almond butter
- 1 Tbsp ground flaxseed
- 1 tsp pure maple syrup (optional)
Instructions
- Prep the flax: Add the ground flaxseed and ¼ cup of orange juice to the blender, allowing it to soak for 2 minutes to help it soften and blend smoothly.
- Add remaining liquids: Pour in the rest of the orange juice, the Greek yogurt, almond butter, and maple syrup if using, creating a creamy and nutritious liquid base.
- Top with frozen ingredients: Add the roasted beet cubes, frozen mixed berries, frozen banana, and freshly grated ginger on top of the liquid in the blender.
- Blend: Start blending on low speed for 15 seconds, then increase to high for 45 seconds or until the smoothie is smooth and has a bright magenta color. If the blender struggles or the mixture is too thick, add cold water gradually to ease blending.
- Taste & tweak: Sample the smoothie and adjust for sweetness or brightness by adding extra maple syrup or a squeeze of lime juice to balance the flavors according to your preference.
- Serve: Pour the smoothie into a chilled glass, optionally garnish with a few frozen berries, and enjoy immediately to benefit from its peak nutritional value and refreshing glow.
