Description

This Yuzu Orange Dutch Baby is a vibrant citrus-infused oven-baked pancake that boasts a light, custardy center and crisp, puffed edges. Featuring the unique floral notes of yuzu combined with sweet orange, it makes an unforgettable choice for brunch or dessert, served with optional toppings like powdered sugar, orange segments, whipped cream, or a yuzu honey drizzle.

Ingredients

Scale

Batter Ingredients

  • 3 large eggs (room temperature)
  • ½ cup whole milk (room temperature)
  • ½ cup all-purpose flour
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • 1 tablespoon fresh yuzu juice (or ½ tablespoon zest)
  • 2 tablespoons fresh orange juice
  • 1 teaspoon orange zest
  • 1 teaspoon vanilla extract
  • 3 tablespoons unsalted butter

Optional Toppings

  • Powdered sugar
  • Orange segments
  • Whipped cream or Greek yogurt
  • Yuzu honey drizzle (2 tbsp honey + 1 tsp yuzu juice)

Instructions

  1. Preheat Properly: Place a 10-inch oven-safe skillet (preferably cast iron) in the oven and preheat the oven to 425°F (220°C). Let the skillet heat for at least 10 minutes to ensure it is very hot before adding batter.
  2. Make the Batter: In a blender, combine the eggs, whole milk, all-purpose flour, sugar, salt, yuzu juice, orange juice, orange zest, and vanilla extract. Blend for 20–30 seconds until the mixture is smooth and slightly frothy. Allow the batter to rest for 5–10 minutes to hydrate.
  3. Butter & Pour: Carefully remove the hot skillet from the oven, add the unsalted butter, and swirl it around until fully melted and sizzling. Immediately pour the rested batter into the hot buttered skillet and return it to the oven.
  4. Bake to Puffy Perfection: Bake for 18–22 minutes, until the Dutch baby is deeply golden and dramatically puffed. Do not open the oven door during baking to prevent deflation.
  5. Finish & Serve: Remove from the oven, dust with powdered sugar, arrange orange segments on top, and drizzle with yuzu honey if desired. Serve immediately while the Dutch baby is puffed and crisp, as it will deflate after 5–10 minutes.

Notes

  • Use room temperature eggs and milk for better batter aeration and rise.
  • Preheating the skillet very well is key for crispy edges and dramatic puff.
  • Blending the batter incorporates air to create a light texture.
  • Serve immediately to enjoy the puff at its peak before it deflates naturally.
  • To vary flavors, add 1 tablespoon Grand Marnier, fold in fresh blueberries before baking, sprinkle turbinado sugar on top for caramelization, or use blood orange instead of regular orange for a deeper color.
