Instructions

  1. Prepare the Zoodles: Spiralize the zucchinis to create approximately 4 cups of zucchini noodles. Spread them out on paper towels to allow excess moisture to be absorbed, preventing sogginess during cooking.
  2. Sautรฉ the Aromatics: Heat sesame oil in a large skillet over medium heat. Add minced garlic and grated ginger, and sautรฉ for about 30 seconds until fragrant, taking care not to burn.
  3. Add Your Vegetables: Add the sliced bell peppers and shredded carrots to the skillet. Stir-fry for about 5 minutes, cooking them until they are tender-crisp and retain some crunch.
  4. Combine Zoodles & Sauce: Gently fold in the zucchini noodles along with the coconut aminos or low-sodium soy sauce. Cook for an additional 3 to 4 minutes until the zoodles are heated through but still retain a firm texture.
